When it comes to championing healthy eating that actually tastes good, Lucy Kenefick, nutritionist and founder of Nume Collective, is leading the charge in Cork. Known for her holistic approach to wellness and her local roots as co-founder of Obodo Gym, Lucy blends nutrition, movement, and education into everything she does, with real food at the heart of it all. Her philosophy is simple: eat foods as close to nature as possible.

“If it flew, grazed the earth, swam in the sea, grew from a tree or in the ground, then it’s probably ok to eat,” Lucy says.

And that philosophy comes to life in every recipe she shares, like her now-signature Scrambled Oats – yes we thought that was a typo when we heard about it first. This tasty dish is  a warm, pan-fried breakfast that mimics the texture of scrambled eggs using oats, banana, egg, and a touch of spice.

Lucy’s Scrambled Oats

1 medium banana

40g (1.41oz) oats

1 large egg

1 tsp chia seeds

1 tsp vanilla essence (optional)

sprinkle of cinnamon (optional)

Toppings – Greek yogurt, berries, nut butter, drizzle of honey, whatever you like!

This recipe is made from real, whole ingredients and is a delicious example of how eating close to nature can taste incredible.  The recipe feeds one and takes ten minutes to prepare.
